Leroy, that's just the guide's way of cutting it for easy transport to the kitchen.  Once in the kitchen they are cut apart into steaks.  For some reason the guides never go get a bowl for the fish.

These steaks are either fried or grilled.  They do the same for king mackerel.

It's been stormy, so the internet connection was down.  But stormy meant the fish were biting (plus it's a new moon).  Here was yesterday's catch (big Mutton Snapper, big Black Grouper, plus lots of Gray Snapper and a few Yellowtail Snapper).
